• ”The Famous” Pork Chop Brine

    2 cups water

    1/4 cup sugar

    1/4 cup salt

    2 T soy sauce

    1 T worcestershire 

    1 T hot sauce

    3 T garlic

    1 bay leaf

    8 whole peppercorns

    1 T mirin

    1 T apple cider vinegar

    1 T turmeric 

    3 cups ice

    • Combine all ingredients except ice and pork. Heat on medium until dissolved.
    • Remove from heat and add ice to cool the brine.
    • Place cooled brine and pork chops into a gallon bag, mix around and squeeze out air.
    • Refrigerate overnight 12-36 hours.
    • Remove from the fridge an hour before cooking.
    • Drain and pat dry the chops, leave out at room temperature.
    • Season with black pepper. DO NOT SALT!
    • Grill both sides until reaching an internal temperature of 135-140°F
    • Let the chops rest for 10 minutes before eating.
